Anyone else craving smoothie bowls on repeat even though it’s sweater weather? I hope it’s not just me.

But really, I’ve been eating breakfast wearing sweatpants, slippers, and a jacket, shivering until the very last bite of my smoothie bowl. Can’t stop won’t stop.

Since I want all the smoothie bowls all the time, I’ve had to come up with some different flavor combos. I love a classic “banana nice cream” with simply bananas, some vanilla, cinnamon, and almond milk, but it’s fun to switch it up! Plus, I have so many smoothie bowl add-ins stuffed in my pantry that I desperately need to use. Food hoarder right here🙋🏼

I’ve been doing lots of pumpkin smoothies, green smoothies (duh, I wouldn’t be a food blogger without green smoothies), banana mango smoothies, and this blueberry mint smoothie bowl. If you’ve never put fresh mint in your smoothie, please RUN DON’T WALK to your nearest grocery store and buy all the mint they have.

I was lucky enough to get this mint straight from my momma’s garden. Guys, I wish you could see her garden. She’s basically taking over the dog’s yard with rows of basil, bell peppers, sweet potatoes, and herbs. It’s like veg heaven when I go home. 🌱

How beautiful is it that we can literally grow food straight from the earth in our backyard? We can watch it grow from a tiny seed into a beautiful plant that produces the healthiest food for us. That just blows my mind. I think it’s such an amazing process, and I feel like you are more connected to your environment when you grow your own food. I can’t wait to live in a home where I can take over the yard with alllllll the veg.

I hope that in a way, I’m like a tiny vegetable seed. I started out very little, but as I go through life experiences and am nourished by the people around me, I’m growing. I’m growing into a woman I am very proud of, and I stand tall. I hope that, just like a vegetable plant gives us healthy food, I can give something of use to everyone I come in contact with. That’s the reason i blog and the reason I want to keep doing this for as long as possible.

Adding fresh mint takes a normal blueberry smoothie to the next level. The combo of banana, blueberries, and mint is so refreshing; a great way to start the day! Highly recommend using all frozen fruit to make it as creamy as possible.

We’re also adding oats from BetterOats for more staying power! If you ever drank a pure fruit smoothie and felt hungry like, 8 minutes after, this a great way to keep you satisfied for longer. Oats are full of fiber and vitamins and minerals, and yes, they can really help lower cholesterol levels! Yay! So pour some oats in that blender and drink up.

I used their Steel Cut Classic oats since they’re already pre-portioned, so all I have to do is pour them in. I also love using these single serving Steel Cut Classic oats when I want steel cut oats but don’t want to wait 30 minutes. Not going to work for this huuuungry morning girl. Single serving packs to the rescue!

Ingredients

  • 1 packet BetterOats Oat Revolution Steel Cut Classic (about 1/3 cup)
  • 2 bananas, frozen
  • 1 1/2 cups blueberries, fresh or frozen
  • 6 fresh mint leaves
  • 1 scoop vegan vanilla protein powder (optional)
  • 1/2 cup non-dairy milk
  • 1 teaspoon vanilla extract
  • Toppings: oats, mint leaves, shredded coconut, berries, sliced banana, hemp seeds, walnuts

Instructions

  1. In a blender or food processor, add oats, bananas, blueberries, mint, protein powder (if using), non-dairy milk and vanilla. Blend until smooth.
  2. Divide smoothie between two bowls. Garnish with your favorite toppings and dig in!
