Whoa, that’s a mouthful. So is this vegan baked oatmeal 🙂

Can we please just take a second to appreciate that this Peanut Butter Banana Chocolate Chunk Baked Oatmeal (say that 5 times fast) has the same heavenly flavor combo as a Reese’s peanut butter cup??? Ugh, I can’t.

One part of my childhood that I am beyond thankful for is that my mom never let us go to school without breakfast. And I’m not just talking a granola bar and a glass of orange juice. Mom made it a point to get up early to cook breakfast for us, from eggs and toast to grits to oatmeal, and sometimes those fluffy Pillsbury cinnamon rolls from the tube. My brother and I would fight over who got to lick the lid of the icing container.

Despite how lucky I knew I was to have a home-cooked breakfast every morning, there was one thing I had to unwillingly force down my throat – oatmeal. I just couldn’t dig it unless I dumped a whole bottle of pancake syrup in the bowl. But as I got older, oatmeal became (and still is!) one of my favorite breakfasts. My mom used to make mine super soupy and I think that’s why I didn’t like it – I much prefer mine thick and chunky with a whole lotta toppings. Which brings me to this vegan baked oatmeal.

We’re packing this vegan baked oatmeal full of creamy peanut butter, slices of banana and big chocolate chunks. And to really take it over the top, we’re making a homemade vegan chocolate sauce to finish it off. It’s so decadent and it’ll keep you feeling satiated all morning long. Let’s dig in.

Ingredients for Banana Peanut Butter Chocolate Chunk Baked Oatmeal

Oatmeal is an inherently nourishing, satiating meal. Oats are a whole grain carbohydrate packed full of fiber and plant-based protein – a winning combo that will keep you feeling full and energized. And this peanut butter baked oatmeal is no exception! Here’s everything you need to make a batch:

  • Old-fashioned oats. Make sure you get old-fashioned oats. Steel cut oats will not work for this recipe.
  • Flax meal. Baked oatmeal is typically made with eggs, so this vegan baked oatmeal utilizes a flax egg as a replacement.
  • Baking powder. Just a touch will make this vegan baked oatmeal light and fluffy instead of heavy and dense.
  • Salt. A little pinch of salt will balance out all of the sweetness we’re adding in.
  • Cinnamon. I love a pinch of cinnamon in this banana baked oatmeal to warm up the flavor profile.
  • Peanut butter. A swirl of peanut butter with the banana and chocolate in these vegan baked oats gives major chunky monkey vibes.
  • Vanilla extract. Because yum.
  • Applesauce. This will help add a bit of moisture and sweetness to our vegan baked oatmeal.
  • Non-dairy milk. You can use any variety you’d like!
  • Maple syrup. We’re using maple syrup in the vegan baked oatmeal, the chocolate sauce we’re making, and as an option you can drizzle more on top, because why not!
  • Dark chocolate. Chop up a bar nice and thick for those melty, delicious chocolate chunks.
  • Bananas. Bananas and oats are a winning combo in my mind, so we’re slicing up some banana and adding it on top!
  • Cocoa powder. As mentioned above, we’re making a homemade vegan chocolate sauce to drizzle on top of this chocolate baked oatmeal.
  • Coconut oil. We’re adding a bit of coconut oil into the vegan chocolate sauce to make it super luscious.

How to Make Vegan Baked Oatmeal

Making a batch of vegan baked oatmeal is a great way to mix up your morning bowl of oats, and it doesn’t even have to be anymore complicated than a pack of your favorite microwave oats!

This recipe can be great for feeding a crowd, as it can feed 6 to 8 people, but I particularly like to make a batch at the beginning of the week to have leftovers. You could also cut it into serving sizes and freeze for those mornings when you reeeeally don’t want to cook. So yes, you can have homemade baked oatmeal just as conveniently as you can have your packaged oats.

To make this vegan baked oatmeal, you’ll start by making a flax egg. Just combine flax meal with water and let it sit for 1o minutes. Then you’ll mix together the oats, baking powder, salt and cinnamon in a large bowl. Then you’ll mix together all the wet ingredients, including the flax egg, peanut butter, vanilla, applesauce, milk, maple syrup and the chocolate chunks. Slice up your banana, set some of it aside for topping, then add the rest of it to your wet ingredients. Next, mix all the wet ingredients into the dry ingredients until fully combined, then pour the baked oatmeal better into a greased casserole dish. Top it off with your leftover banana slices and bake in a 350F oven for 25-45 minutes.

While that’s in the oven, we can make the vegan chocolate sauce!

Homemade Vegan Chocolate Sauce

For an extra dose of goodness, we’re making a batch of homemade vegan chocolate sauce to drizzle on top of this delicious peanut butter baked oatmeal. It’s so simple to make and you’re gonna want to pour it on everything.

While your vegan baked oatmeal is in the oven, we’ll make the chocolate sauce. Melt your coconut oil in the microwave or on the stove, then add in your cocoa powder, maple syrup, vanilla and salt. Mix it all together and drizzle it on top of your baked oatmeal! You’re welcome 🙂

In addition to this vegan chocolate sauce, I love to top my baked oatmeal with fresh fruit and a splash of maple syrup. For a fun weekend breakfast or when I’m using this as a dish to feed a crowd, I like to set out coconut whipped cream, extra chocolate chunks and maybe some chopped walnuts or pecans!

Ingredients

  • 2 tablespoons flax meal + 5 tablespoons water
  • 2 1/2 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup peanut butter, plus more for drizzling
  • 1 tablespoon vanilla extract
  • 1/2 cup applesauce
  • 1 1/4 cup unsweetened almond milk or other non-dairy milk
  • 1/4 cup maple syrup
  • 1/2 cup dark chocolate, chopped (optional)
  • 3 bananas
  • 2 tablespoons cocoa powder
  • 1 tablespoon coconut oil, melted
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350F. Lightly grease or spray a 7×13 baking dish.
  2. In a medium bowl, combine flax meal and water. Let sit in the fridge for 10 minutes.
  3. In a large bowl, add oats, baking powder, salt, and cinnamon. Stir to combine.
  4. In the bowl with the flax eggs, add peanut butter, vanilla, applesauce, milk, maple syrup, and dark chocolate, if using. Stir to combine.
  5. Chop 2 1/2 of the bananas and add to the peanut butter mixture. Slice the remaining 1/2 of the banana; set aside.
  6. Slowly pour wet mixture into the large bowl with the oats. Mix well until evenly combined.
  7. Pour the mixture into the greased pan. Top with banana slices.
  8. Bake for 35-45 minutes, until the oatmeal is slightly golden.
  9. In a small bowl, combine cocoa, melted oil, maple syrup, vanilla, and salt. Mix well. Pour over the baked oatmeal.
  10. Divide into 6-8 pieces. Top with fresh fruit and maple syrup!

Notes

Freezing:
To freeze, divide the baked oatmeal into desired serving sizes. Place each piece in a freezer-safe zip bag or plastic container; place in the freezer.
Reheat in the microwave when ready to eat.
