Cayden and I spent the last week of our time together in Baton Rouge (for now, since I’m moving to Colorado) doing everything we have been saying we wanted to do but never made time for. We just pushed all other plans aside and said, okay, we’re going to make the most of this week.

We went to the lazy river at our school gym, kayaked, walked Leo outside (yes, a cat on a leash), visited his family and then did something I’ve been dying to do for years… BLUEBERRY PICKING.

We woke up at 5:30 AM to drive to a you-pick blueberry farm, which uses organic growing techniques. We ended up picking 13.75 pounds of blueberries, which you buy for (wait for it) $3 A POUND. I was in heaven.

What does a girl do with 13.75 pounds of the best blueberries in the world, besides eating them by the handful all day? Make blueberry pancakes, jam, waffles, smoothies and the most beautiful summery peach blueberry sangria!

We’re also adding Pompeian Organic Apple Cider Vinegar because 1. it contains “the Mother” which contributes to its health benefits, and 2. it adds a tangy, fermented flavor similar to wine!

Ingredients

  • 2 cups blueberries
  • ½ cup fresh mint, plus more for garnish
  • 2 peaches, sliced
  • 3 cups white grape juice
  • 3 cups seltzer water
  • ¼ cup Pompeian Organic Apple Cider Vinegar

Instructions

  1. In a drinking glass, place ½ cup blueberries and mint. Muddle until the blueberries are broken up and the mint is fragrant. Pour the mixture into a large pitcher.
  2. To the pitcher, add the remaining blueberries, peaches, grape juice, seltzer water, and Pompeian Organic Apple Cider Vinegar. Stir to combine.
  3. Place pitcher in the fridge for at least 1 hour to enhance the flavors. When ready to serve, pour into individual drinking glasses and top with fresh mint.
