Ah, Valentine’s Day. Is these a more divided holiday? There’s some couples exchanging fancy watches and perfume over 5-star dinners, and some people in sweatpants are binge watching reruns of The Office while pinning to their wedding boards on Pinterest. It’s definitely one of those holidays that can go either way – you feel like running through a field of flowers, or you just want to shove your face into a pint of ice cream (Ben & Jerry’s vegan ice cream, of course).

OR, you just say screw it to all the things you’re “supposed” to do if you’re single or taken on Valentine’s Day, and eat a stack of damn beet pancakes no matter what.

I’m usually in Camp Netflix on Valentine’s Day, but I’m lucky enough to spend it this year with someone who means a whole lot to me. No matter your relationship status (it’s complicated?), I think Valentine’s Day is about evaluating all your relationships, including the one with yourself, to see if you’re being the most loving, supporting, giving friend/sister/daughter/girlfriend/self you can be.

Of course one of the perks of Valentine’s Day is the abundance of cute little treats in all shades of pink and chocolate. Since most of the Valentine’s Day treats you’ll find in stores aren’t all that healthy, myself and a few of my fave bloggers wanted to bring you some delicious recipes you can make for your loved ones at home! We’ve got breakfast, dessert, and snack time covered, so you’ll be eating good all day on the 14th.

The best way I can show someone how much I truly care about them is by cooking them good food. You can celebrate, mourn, or just catch up with someone over a delicious plate of home-cooked food. How special is it to share a meal with someone that you spent time preparing and cooking? I think it’s even more special when the food you cook is healthy and nourishing, because you really get to show that person you care about their health and well-being.

What better way to show someone you love them than with a huge plate of pink of pancakes? I can’t think of anything more perfect.

These pancakes require just a handful of simple ingredients you probably already have, with the exception of the beets! I’m a huge fan of adding vegetables to everything possible (example A: this beet smoothie). Since I’m not ’bout that artificial coloring life, I went with beets to give these pancakes a gorgeous pink hue perfect for Valentine’s Day. You can roast fresh beets ahead of time and puree them, but if you want an easier option, grab a can of sliced beets and puree those, adding a touch of almond milk if needed to get the puree going. Make sure you don’t get pickled beets! Those would be some nasty AF pancakes…

I used oat flour in these so even your gluten-free loved ones can enjoy a stack! This recipe makes enough for 2 (maybe 3, but 2 for how we eat), but feel free to double or even triple the recipe to feed a crowd. I HIGHLY recommend drizzling with some maple syrup and topping with a fat dollop of coconut whipped cream. Check the notes of the recipe for directions!

There’s really nothing better than that first bite of pancakes, amiright?!

Ingredients

  • 1 tablespoon flax meal + 2 1/2 tablespoons water
  • 1 cup oat flour (ground-up oats)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup beet puree
  • 1/2 cup almond milk
  • 2 tablespoons applesauce
  • 1 tablespoon maple syrup or agave nectar
  • 1 teaspoon vanilla
  • 1 can full fat coconut milk or coconut cream (optional)*

Instructions

  1. In a small bowl, add flax meal and water. Mix; let sit for 5-10 minutes.
  2. Grease a skillet with nonstick spray or a little coconut oil. Warm over medium-low heat.
  3. In a large bowl, add oat flour, baking powder, and salt. Stir to combine. In a medium bowl, add beet puree, milk, applesauce, maple syrup, vanilla, and flax egg. Whisk to combine.
  4. Slowly pour wet ingredients into the large bowl; stir until just mixed together, but don’t over mix. Let the batter sit for 5 minutes.
  5. Pour 3 tablespoons of batter into the pan to form one pancake. Fit as many pancakes as you can in the skillet. When the side facing up starts to bubble and the underneath is cooked through, flip pancakes. Cook for a minute or so longer. Repeat until you have used all the batter.
  6. Top with coconut whipped cream*, maple syrup, and fruit of choice.

Notes

*For the coconut whipped cream, place the can of coconut milk in the fridge the night before. When you are ready to make the pancakes, open the can and scoop out the coconut milk solids from the top of the can (reserve the clear liquid for smoothies if you want). Place in a bowl and beat with an electric mixer until smooth, adding sweetener if desired.
