Instructions

  1. Preheat oven to 350ºF. Lightly grease a donut pan. (These also work in a muffin pan.)
  2. In a medium bowl, add non-dairy milk and vinegar. Stir to combine; set aside for 10 minutes.
  3. Add oats to a blender or food processor.** Blend until a fine flour forms, about 2 minutes.
  4. In a large bowl, add oat flour, sugar, baking powder, baking soda, cinnamon, and salt. Stir to combine.
  5. To the milk mixture, add applesauce, nut butter, maple syrup, and vanilla. Whisk until fully combined.
  6. Pour the wet ingredients into the dry ingredients. Stir until the ingredients are fully combined.
  7. Add batter to each donut cup until full. (If using a muffin, fill each cup about 3/4 full.)
  8. Bake for 15-17 minutes in a donut pan, or X minutes in a muffin pan. Let cool for 10 minutes.
  9. In a small bowl, add glaze ingredients. Whisk until combined, then drizzle over donuts.

Notes

*Use a nut-free alternative like sunflower seed butter, if needed.

**If you don’t have a food processor or blender up to the job, One Degree Organics also has flours available for purchase! I’m doing it this way because I love the flavor imparted by the oats.
