Every now and then, I scroll through my Instagram to reflect on how much my account has grown and improved from the days of yellow kitchen lighting to what it is now: a colorful feel with peanut butter drizzles and well-arranged bowls.

In a lot of ways I miss those old days of Instagram, when everyone was just sharing their food because it was fun. No one really cared about how pretty it looked. No one was getting sponsorships. It was just people that liked eating green smoothies sharing because they enjoyed it.

While I was scrolling through the other day, I got to 2015—a year before I changed the name to @emilieeats and started this blog. Can you believe 2015 was three years ago?!

That year, I posted a few recipes by my favorite blogger (Alexis of Hummusapien) that I cooked, like baked spaghetti with tofu ricotta (OMG) and her famous curried chickpea salad. I made that salad SO MUCH. It’s full of chickpeas, veggies, cashews, raisins, and a creamy curry tahini sauce that I could drink.

Seeing my old picture of that recipe is what inspired me to create this curried seitan salad. Thanks, Alexis, for the inspo!

The best thing about this curried seitan salad? It requires NO COOKING. You read that right. No cooking means less time spent in the kitchen, less heat when it’s already 95ºF, and more time hanging out by the pool. Yes, please!

Simply throw together crunchy vegetables and Sweet Earth Foods Curry Satay Seitan with a creamy curry dressing for a quick, healthy meal! It’s pretty customizable—use mayo or yogurt, whatever raw vegetables you have, and maybe raisins instead of grapes. Serve as a sandwich filling, in lettuce wraps, or over grains!

Never heard of seitan? It’s a plant-based product usually used as a meat alternative since it’s made with vital wheat gluten and is PACKED with protein.

Ingredients

  • 1 package Sweet Earth Foods Curry Satay Seitan, chopped
  • 1 cup grapes, halved
  • 2 small or 1 medium carrot, diced
  • 2 stalks celery, diced
  • ½ bell pepper, diced
  • ½ cup non-dairy mayonnaise or non-dairy unsweetened yogurt
  • ¼ cup almonds, chopped
  • ¼ cup cilantro, finely chopped
  • 2 teaspoons curry powder
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, add all ingredients. Stir to evenly coat all ingredients in the mayonnaise and curry powder. Season with salt and pepper to taste.
  2. Serve in lettuce wraps, on sandwich bread, over whole grains, or on its own.
