Lemony Orzo White Bean Soup

Sometimes it doesn’t feel like springtime – you know, with all the dumpster fire garbage that’s happening in the world. It just feels dark, confusing, and painful. But on our almost-daily walks around the neighborhood, we’ll catch glimpses of purple flowers and thick green leaves popping up from the ground. Spring! It’s always a good reminder that no matter what’s happening, we always have something beautiful to look forward to.

There is nothing that screams SPRING more than this zippy lemony orzo white bean soup. Lots of lemon flavor, seasonal asparagus, and peas, plus hearty white beans and orzo. What’s not to love?!

What is Orzo?

Orzo is actually a type of pasta! It’s a short-cut pasta that looks like really long grains of rice. It’s typically made with enriched wheat flour (this is what we used), but you may be able to find whole grain orzo or even gluten-free orzo.

For this white bean soup, you could also sub in other types of pasta like rotini, penne, or elbows. Just be sure to check the cooking time and adjust accordingly. Heck, you could even replace the orzo with cooked rice! Soup is very forgiving, so don’t be afraid to experiment a bit.

How to Store White Bean Soup

This lemon orzo white bean soup will keep in the fridge for up to a week. Although, you may need to add more broth or water to it as the soup will thicken in the fridge.

This white bean soup is also freezer friendly! Simply store it in a freezer-safe container (I like to freeze it in single-serving jars for easy one-person dinners), defrost in the fridge, then heat in the microwave or on the stove.

Ingredients

  • 2 tablespoons oil
  • 1 medium yellow onion, diced
  • 3 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups orzo
  • 1 bunch asparagus, ends trimmed (about 2 cups)
  • 8 cups low-sodium vegetable broth
  • 1/2 cup lemon juice
  • 2 15-ounce cans white beans, drained and rinsed
  • 1 cup green peas (canned or frozen)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground thyme 
  • 1/2 teaspoon ground turmeric

Instructions

  1. In a large pot over medium heat, add oil. When hot, add onion and celery. Cook for 5-7 minutes, stirring, until tender and lightly browned. Add garlic; cook for 1 minute, until fragrant.
  2. Add orzo, asparagus, broth, and lemon juice. Bring to a boil, then reduce heat to low and simmer for 8-10 minutes, until orzo and asparagus are tender.
  3. Add white beans, peas, salt, pepper, thyme, and turmeric; stir. Cover and simmer for 10 minutes.
