I’m Emilie, a 20-year-old college student from Louisiana studying public relations and constantly dirtying my kitchen. Oops.
I love good-for-you foods, nutrition, and getting my sweat on. I got my love of cooking and all things healthy from my mom (hi mom!), who, no matter what, always made sure we had a balanced breakfast and a home cooked dinner.
It wasn’t until summer 2013 when I completely cleaned up my diet and got rid of everything processed that I truly found my passion in cooking real, wholesome foods. Over time, I’ve learned more about the environmental and health implications of eating animal products, so I’ve transitioned to a plant-based, vegan diet. But that doesn’t mean I sacrifice taste! I started Emilie Eats in August 2015 after many months of contemplating; I love nutrition more than anything and wanted to share what I’ve learned with anyone who was willing to read. I didn’t (and still don’t) know if I would succeed, or if anyone would cook my recipes, but I knew if I put passion behind it, it would all be worth it.
My goal with this blog is to inspire you to respect and love your body by nourishing it with whole foods and finding something active that you enjoy. I want you (especially you college kids!) to have fun in the kitchen, love the food you eat, and get excited about working out. Most importantly, I want to show you that you don’t need crazy diets and obsessive calculating to be healthy; that you can have a social life and eat right; that eating plant-based does NOT mean plain lettuce and skipping out on dessert. ‘Cause this girl needs dessert sometimes.
I hope to show you that eating real, whole foods can and should be simple, enjoyable, and absolutely delicious. If I can impact just one person’s life by encouraging them to eat better, I’m content.
I spend my nonexistent spare time reading my favorite food blogs, visiting my local farmer’s markets, and sipping on any kind of tea I can get my lips on. I also love yoga, Pilates, group fitness classes (holla, Body Combat), and walking the Lakes here in Baton Rouge.

1. My all-time favorite food is green apples.
2. I am terrified of frogs.
3. I’m ABSOLUTELY OBSESSED with kombucha and
hope to start brewing my own soon. I started brewing my own finally, and it is seriously life changing! Learn how to start here.

5. I go grocery shopping when I’m bored; Whole Foods is my happy place on a bad day.
6. I love group fitness classes and yoga, but I hate running.
7. I’m a public relations major possibly looking into grad school. My dream job is running the communications/PR department of Whole Foods Market & keeping up this blog! *sigh*
9. I’m in love with Chicago and am currently fantasizing about moving there after graduation.
