I’ve had my fair share of underwhelming salads. I’ve fallen victim to limp greens, too-oily dressing, and flavorless carrot sticks. You know the type. I’m here to say that this does not need to be the case! Getting your greens in can be a delicious, colorful, and honestly FUN experience. Today we’re talking all things leafy, with a focus on plant-based salads that will actually keep you full.
How to Make a Filling Salad
- Start off with a fun base green and some veggies! Some of my favorites include kale, romaine, and arugula. Additional veg toppings amp up the fiber and color of your bowl.
- Next, add in a plant-based protein. Lentils and beans are very affordable and increase the satisfaction factor.
- Add more flavor with a fat of some kind, like a dressing with olive oil. Avocado can also play this part well! A lot of the vitamins in salad are fat-soluble, so your body will absorb them fully when consumed with a healthy fat.
- Finish off with a fun topping! Sometimes I like to add croutons or seeds for some crunch, or fresh herbs for brightness.
